Here are two original ideas he has created for 2015 to satisfy all hardcore fans of fruit or chocolate. La Bûche Passion is an ode to the eponymous fruit, with a subtle blend of almond cream and passionfruit, exotic mousse and a compote of mango and apricot with fresh diced mango, all on a shortbread base. Alternatively, La Bûche Façon Profiteroles offers a celebration in chocolate. After just a glance, you’ll be unable to resist the chocolate fondant and vanilla and mascarpone profiteroles on a chocolate shortbread base, all topped with chocolate sauce.

This is actually a festive cake and not a traditional Christmas log that the genius pastry chef has concocted for Christmas 2015, but it’s so amazing that we’re certainly not going to quibble. Called Fantastik Mr Christmas, it’s thematically consistent with his usual creations, marrying fabulous flavours with finesse to provide pleasure for our palates, and is a far cry from the typical and often heavy chocolate cake served at the end of a gala dinner. No; this light and exquisite Mr Christmas is a round delight of 3 cm in height, dressed in red and decorated with a white marshmallow beard. The taste of milk chocolate is combined with a biscuit delicately flavoured with blackberry tea, and the crunch of cocoa beans and sea salt bring something truly unique to the taste party. This creation is a total success and your guests will rave about the subtle flavours of this delicious dessert.
